Chef Tim and Rebecca of Flying Fish took to the high seas as culinary
guests of Holland America cruise line. As a special feature of the MS
Oosterdam, 12 days in November, the ship hosted, “Sip, Savor & Sail”
Tim hosted cooking demonstrations in the ship’s
Culinary Arts Center (presented by Food & Wine magazine) for a full
house. His signature grilled calamari with brown butter, capers, roasted
garlic & tomato was an instant hit. The next cooking demonstration
was sweet pea risotto with crispy skin snapper...
