Chef Tim and Rebecca of Flying Fish took to the high seas as culinary guests of Holland America cruise line. As a special feature of the MS Oosterdam, 12 days in November, the ship hosted, “Sip, Savor & Sail” themed events.

Tim hosted cooking demonstrations in the ship’s Culinary Arts Center (presented by Food & Wine magazine) for a full house. His signature grilled calamari with brown butter, capers, roasted garlic & tomato was an instant hit. The next cooking demonstration was sweet pea risotto with crispy skin snapper...

Freeport, Grand Bahama Island - The Flying Fish March event brings a guided tour through wines of the world. Join us Monday, March 30th at 7pm for different tasting tables set throughout the Flying Fish restaurant with a theme of wine and the food to pair with it.

Each table will have a guide to walk you through the pairing, the wine, the food and their relationship to each other. It will be a fun evening that's entertaining and educational! This is an informal cocktail party atmosphere so there is no pressure.

2014 was the most incredible year for us here at Flying Fish.  It is remarkable all the things that have happened here in the last 12 months. The list of accolades and awards continues to mount...

On New Year's Day we capped the year off by being named #9 on the Top 50 Restaurants of the Caribbean by Caribbean Journal.  
A remarkable run to say the least!  We are overwhelmed.

Freeport, Grand Bahamas Island - Monday November 19th history was made in the Bahamian culinary world. Flying Fish restaurant hosted the first of its kind; a 'Top Chefs of the Bahamas' dinner. In a sold-out event, Chef Simeon Hall, Chef Erika Davis and Chef Angel Betancourt flew in from Nassau and along host Chef Tim Tibbitts of Flying Fish collaborated on a 13 course dinner showcasing a menu with a local flare.

Chef Hall (Simeon Hall Restaurant Management Group) and Chef Tibbitts created the savoury courses; and Chef Erika (Graycliff Chocolatier) and Chef Angel (One & Only Ocean Club) created the sweet courses. In house sommelier, Rebecca Tibbitts, paired wines for dinner courses...

The Grand Bahama Chamber of Commerce held their 5th Annual Business Excellence Awards Ceremony, under the theme "Excellence in Hard Times"  on October 25th at the Regency Theatre in Freeport.  Chef Tim Tibbits, owner of Flying Fish Restaurant won the Developing Entrepreneur Award.

He told The Freeport News that he and his wife owe everything to their staff. He feels that because his chefs are able to read and repeat his 'mind, style, flavours, everything'  he is able to spend time promoting his business and the island.

"USA TODAY Network talks with chef Tim Tibbitts about lionfish, a non-native fish that's taking over the Atlantic Ocean, in our new audio series, "Something to Chew On."

Tibbitts co-founded Flying Fish in Freeport, Grand Bahama, an upscale seafood restaurant in the Caribbean that serves the invasive species to patrons. He explains how having it on his menu helps out the environment and the local economy.

While the exact size of the lionfish population is unknown, experts estimate that it is in the millions. There have been as many as 200 adults counted per acre of water, according to REEF and the National Oceanic and Atmospheric...

Chef Tim Tibbitts of the award -inning top Caribbean restaurant, Flying Fish in Grand Bahama Island attended the Taste Our Bahamas Festival in Nassau last weekend a as part of Culinary Month.  Taste Our Bahamas is a new food lovers festival and is in its inaugural year.

Chef Tibbitts was invited to participate by the Ministry of Tourism.  "I always love the opportunity to help spread the word about what we do at Flying Fish, I especially like to do that in Nassau," said the Chef, who had a busy year with several engagements over the summer in the USA.

Tibbitts presented his Bahama Mama Conch Ceviche in which he uses John Watlings Rum, Nassau Royale, Grand Bahama dragon fruit...

Back from a few weeks' of a working vacation, Chef Tim has added some fantastic new dishes inspired by his travels. Come in and enjoy some of the finest dining in the Caribbean. 

Chef Tim and Rebecca travelled to New York City twice over the summer for events to promote Flying Fish and Grand Bahama Island.  The first event on July 10th, Bahamian Independence Day, was at James Beard House...

Manhattan, NYC -  "Reserved NYC" an event that showcases the talent of top Caribbean chefs, was first held in 2012 and again on August 7th.

Four chefs representing the islands of St. Lucia, Jamaica and the Bahamas gave guests a culinary experience and helped raise money for two nonprofits, as Melissa Noel reports in this video.

Freeport, Grand Bahama -  On August 6, Chef Tim Tibbitts of Flying Fish and the Ministry of Tourism took to New York City to represent the Bahamas in a Midtown loft as part of an elegant affair called RESERVEDnyc. - Chefs of the Caribbean.  Hosted by Ocean Style magazine, this was an intimate affair, a culinary experience tailored for an audience with an appreciation for fine living and exquisite food.  The guests had the opportunity to feast on a wide array of different dishes and interact directly with the Chefs.  This chic event featured acclaimed chefs from New York city, St Lucia and the Bahamas.  There was a silent auction in benefit of the Caribbean Tourism Organization (CTO) Foundation and The American Friends of Jamaica Inc.

Before the event, the organizer OCEAN Style Editor-in-Chief, Douglas Gordon was quoted saying: “We are excited about the chefs that are participating.  Each chef will prepare and serve 2-3 exquisite dishes and guests will have the opportunity to interact directly with them. Our goal is to create an enjoyable, dynamic and engaging experience for the guests and chefs”.
