NEW YORK -- Chef Tim Tibbitts, Executive Chef and Owner of Flying Fish Restaurant in Freeport, Grand Bahama,  along with his wife, Mrs. Rebecca Tibbitts, Co-owner and General Manager of Flying Fish Restaurant, paid a courtesy call on the Hon. Forrester J. Carroll, Bahamas Consul General to New York, on Friday, July 11, 2014, at Bahamas House, 231 East 46th Street.

The restaurateurs were on a brief tour of New York making stops at the James Beard House, showing their talents at the “Sustainable Seafood Celebration” and Food and Wine Magazine. The AAA 4 Diamond Award winning team is making waves in the culinary world...

Bahamian Chef Tim Tibbitts heading to New York City to cook at James Beard House - Jul 4, 2014 - 12:00:13 PM

Freeport, Grand Bahama - Bahamian Chef Tim Tibbitts of Flying Fish in Freeport has been asked to join celebrity chef Anthony Lamas for Chef Lamas’ sustainable seafood event at the legendary James Beard House in New York City.  The event will be held on July 10th, Bahamian Independence Day. 

“I am humbled and incredibly proud of this invitation, and even more proud to bring some good publicity to the island of Grand Bahama,” said Chef Tim, Owner and chef at Flying Fish.

Tibbitts has had quite a year this year being named one of the top 25 chefs of the Caribbean by Caribbean Journal magazine earlier this year and just this week Flying Fish became the first restaurant in Grand Bahama’s history to earn a 4 Diamond Rating from AAA.

Summer is quickly approaching here at Flying Fish.  The warm weather is upon us and that means patio season is at its height.  It has been a very hectic and rewarding past few months and we would like to take this opportunity to thank all those who make this possible.  To all our valued guests, both local and visitor, thank you for continuing to support Flying Fish.  Without your patronage we would not have made it through our first 2 years.

As summer approaches we always like to do things to let our guests enjoy the beauty of our setting and the incredible weather our piece of paradise provides.  So once again Chef Tim will be heading out to the patio every Wednesday night to shuck fresh off the plane oysters.

A relative new comer to the scene, his restaurant, Flying Fish is only 2 years old and is already widely regarded as one of the best in the region; an incredible accomplishment in such a short period of time. It's been two years since we started our journey here at Flying Fish.  Boy, have we come a long way!  Starting with the rebuild, we have transformed an old building into something new, full of hope and promise.  Now, two years later, it is blossoming into something we did not expect; one of the best dining experiences available, anywhere in the region.  We would like to thank you, the supporters of Flying Fish, for your help in getting us to the pivotal two year mark.  Without your help and support we would not have made it this far.

As an added bonus to our anniversary celebrations, Chef Tim was named one of the Top 25 Chefs in the Caribbean.  It came as a huge surprise to us here; being only two years old means it is sometimes difficult to get noticed by mainstream media.

The Flying Fish Educational Series continues with a Supper Club event in the theme of a Japanese Kaiseki meal. The Flying Fish team present their take on a multi-course with very traditional Japanese ingredients. This one-of-a-kind meal will be a real treat on Monday, February 24th.

This meal will be very special. A twelve course tasting in the traditional kaiseki style. Chef Tim has amazing Japanese ingredients coming including uni, unagi, hamachi kama and hokkigai. There will be a lot of amazing dishes done in a very traditional style with Flying Fish flare.

Freeport, Bahamas – Flying Fish was recently awarded a plaque for winning the 2013 Festival Noel Chef competition by the Grand Bahama Branch of the Bahamas National Trust (BNT). Chef Noel was chosen by the over 300 guests who attended Festival Noel held annually at the Rand Nature Centre in Grand Bahama.

"Everyone here at Flying Fish is proud and honoured to have been the people's choice for Chef Noel” said Tim Tibbitts, Chef at Flying Fish. “It was a wonderful night and a very entertaining time. We're also pleased that the student chefs that joined our team for the evening have continued to come to the restaurant as interns to continue their education in the culinary field. That is the most rewarding thing that could come out of this whole process and we are thrilled with the outcome."...
