"The long tradition of eating seafood on Christmas Eve dates from the Roman Catholic tradition of abstinence – in this case, refraining from the consumption of meat or milk products – on Wednesdays, Fridays and (in the Latin Church) Saturdays, as well as during Lent and on the eve of specific holy days. This past weekend, the Flying Fish team hit the Gourmet Foods International Food Show at the Hard Rock Casino in Fort Lauderdale to meet and greet some top performing artisanal food and wine producers.  Knowing where the products come from is very important in the Flying Fish philosophy and getting the opportunity to talk to producers is always a great way to learn more about their product.  Chef Tim took part in this year's Institut du Fromage fall series of cheese tastings and sessions on artisan and farmstead cheeses learning about production to sanitation to pairing.

After sharing ideas and trying new products, the fall menu at Flying Fish is almost complete.  Our menu is always changing due to local availability and the seasons.  Flying Fish is introducing new dishes for the fall season.

Every fall the buzz surrounding the Bahamas Foods Services Food Show is deafening to those in the hospitality industry. The annual event, hosted by Bahamas Foods Services and their affiliates, is held in the Grand Ballroom at Atlantis, Paradise Island and is a chance for industry professionals to mix and mingle and learn about the products carried by the supplier and get up to speed on upcoming trends. 

This year, Freeport's own Chef Tim Tibbitts was on center stage presenting a demonstration of some of the modern techniques used at Flying Fish Modern Seafood.  Because these techniques are not used by any other restaurant in the country, there was a lot of anticipation and interest in the topic.  In front of hundreds of show participants, Chef Tim took the stage to demonstrate

It was in 1993 that I decided that being a chef was a good idea. I was working as a baker in a small donut shop and wanted to do something else, something more creative. It was also the same year that the Food Network first made its appearance on television. In my early years, the Food Network made a huge impression on me as a cook because the shows that it featured then focused on actual cooking. Emeril Lagasse was actually a really great chef before he became a cartoon of himself and a catch phrase. One of my favorite hosts from that era of food network was a chef named David Rosengarten.

David hosted over 2500 episodes of Food Network in various show forms, my favorite being called Taste. He also wrote some excellent books. One of which I still use frequently: The Dean and Deluca Cookbook. It’s a great book with tons of recipes that actually work...

On July 1st of this year, the government of the Bahamas decided that it was going to drop a bomb on the tourist sector. Without any lead time, prior knowledge or transparency even between different government ministries, they decided to end tourism in the Bahamas in one simple step. They raised the already ridiculously high taxes and fees on airlift. Now I believe, fortunately for us this was done on a national level and not just to struggling Grand Bahama. The fact that it was done nationally will be the only saving grace in this decision and I’ll tell you why.

For as long as people have been eating food, people have also been searching for ways to make food more flavorful.  Through the scientific observations of food we’ve come to understand different compounds that are naturally occurring in food and as humans do, people have tried to isolate them and create them artificially.  Sometimes the results are great.  Sometimes the results are not so great.  Either way, the search for more flavor is on going.  

One of the isolated compounds in food that is primarily responsible for foods flavor is Glutamic Acid. Glutamic acid (abbreviated as Glu or E) is one of the 20-22 proteinogenic amino acids, and its codons are GAA and GAG. It is a non-essential amino acid. The carboxylate anions and salts of glutamic acid are known as glutamates. In neuroscience, glutamate is an important neurotransmitter that plays a key role in long-term potentiation and is important for learning and memory...

Musings About a Country: The Food Scene in Nassau - Jun 26, 2013 - 7:53:05 PM

Last week I spent a few days in Nassau.  We are trying to do some collaboration with some names you may know in Nassau and some here in Grand Bahama.  It was an enlightening trip to say the least.  So many positives and quite a few negatives but everything was a good learning experience.  

First off, I’ll start by saying I was born in Nassau but have never felt like Nassau was home to me.  My sister lived in Nassau for many years and I would visit her often and was quite familiar with the east side of the island.  Now, having spent quite a fair bit of time driving around and getting reacquainted with the island let me say this; Western New Providence is beautiful...
